Ingredients

  • 0.5 pound Ground beef
  • 1 cup Refried beans
  • 1 tablespoon Taco seasoning mix
  • 4 large pieces Flour tortillas
  • 0.25 cup Vegetable oil
  • 0.5 cup Red enchilada sauce
  • 1 cup Shredded Mexican cheese blend
  • 1 medium, diced Tomato
  • 2 stalks, sliced Green onions
  • 0.25 cup Sour cream
  • 0 Optional toppings: jalapeños or black olives

Directions

Step 1

In a skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.

Step 2

Add the taco seasoning mix to the beef along with 1/4 cup of water. Simmer for 2-3 minutes until the mixture thickens. Remove from heat and set aside.

Step 3

In another small saucepan, heat the refried beans over low heat until warm and spreadable. Keep warm.

Step 4

Heat the vegetable oil in a large frying pan over medium heat. Once the oil is hot, fry each flour tortilla one at a time until crispy and golden, about 1-2 minutes per side. Place the fried tortillas on paper towels to drain excess oil.

Step 5

Assemble the Mexican pizza: spread a layer of warm refried beans on one of the fried tortillas followed by a layer of the cooked taco meat. Top with a second fried tortilla.

Step 6

Spread a thin layer of red enchilada sauce on top of the second tortilla. Sprinkle generously with shredded Mexican cheese blend.

Step 7

Place the assembled pizzas on a baking sheet and broil in the oven for 1-2 minutes, just until the cheese is melted and bubbly. Watch carefully to avoid burning.

Step 8

Remove from the oven and top with diced tomatoes, sliced green onions, and any optional toppings such as jalapeños or black olives.

Step 9

Slice the Mexican pizza into quarters using a sharp knife or pizza cutter and serve with a dollop of sour cream on the side.
