Ingredients

  • 1 kg Lamb ribs
  • 500 ml Milk
  • 500 ml Water
  • 1 pinch Asafoetida (hing)
  • 2 tsp Fennel powder
  • 1 tsp Ginger powder
  • 1 piece Cinnamon stick
  • 4 Green cardamom pods
  • 4 Cloves
  • 1 tsp Salt
  • 200 ml Ghee (clarified butter)
  • 0.5 tsp Ground turmeric

Directions

Step 1

Clean and trim the lamb ribs. Cut them into individual pieces for easier cooking.

Step 2

In a large pot, add the lamb ribs, milk, and water. Place over medium heat.

Step 3

Add asafoetida, fennel powder, ginger powder, cinnamon stick, green cardamom pods, cloves, turmeric, and salt to the pot.

Step 4

Bring the mixture to a gentle boil and then reduce the heat to low. Cover and simmer for 45–60 minutes or until the ribs are tender and infused with the spices.

Once the ribs are cooked, carefully remove them from the pot and let them cool. Reserve a little of the cooking liquid if desired.

In a skillet, heat the ghee over medium heat.
