  • 0.25 cups Granulated sugar
  • 0.5 cups Unsalted butter (melted)
  • 1 can Sweetened condensed milk
  • 1 cup Heavy whipping cream
  • 0.75 cups Key lime juice (freshly squeezed or bottled)
  • 1 tablespoon Lime zest
  • 1 teaspoon Vanilla extract
  • 0 N/A Optional: whipped cream and lime slices for garnish

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a mixing bowl, combine the graham cracker crumbs and granulated sugar.

Step 3

Pour the melted butter into the mixture and stir until the crumbs are evenly coated and resemble wet sand.

Step 4

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Use the bottom of a flat glass or measuring cup to smooth it out.

Step 5

Bake the crust in the preheated oven for 5 minutes. Remove from the oven and let it cool completely.

Step 6

In a large bowl, whisk together the sweetened condensed milk, key lime juice, lime zest, and vanilla extract until smooth and well combined.

Step 7

In a separate chilled mixing bowl, whip the heavy cream using an electric mixer until stiff peaks form.

Step 8

Gently fold the whipped cream into the lime mixture in small batches, being careful not to deflate the cream.

Step 9

Pour the mixture over the cooled graham cracker crust and smooth the top with a spatula.

Step 10

Cover the pan with foil or plastic wrap and freeze for at least 6 hours or overnight, until completely firm.

Step 11

To serve, remove the dessert from the springform pan and slice into wedges. Garnish with whipped cream and lime slices, if desired.
