  • 15 ounces (drained and rinsed) cannellini beans
  • 15 ounces (drained and rinsed) red kidney beans
  • 1 medium, diced zucchini
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 1 cup penne pasta (optional)
  • 2 tablespoons, chopped fresh parsley
  • 0.25 cup (optional, for serving) grated Parmesan cheese

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the Italian sausage and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the sausage from the pot and set it aside.

In the same pot, add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened.
