Ingredients

  • 2 large (about 1 lb total) chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 cup wild rice blend
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

In a large, deep skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, melt 2 tablespoons of butter over medium heat. Add the chopped onion, diced carrots, and diced celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

Step 4

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Sprinkle the flour over the vegetables and stir well to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.

Step 6

Gradually pour in the chicken broth while stirring to avoid lumps. Bring the mixture to a simmer.

Step 7

Stir in the wild rice blend, thyme, and rosemary. Nestle the browned chicken breasts into the liquid and reduce the heat to low. Cover and cook for 35-40 minutes, or until the rice is tender and has absorbed most of the liquid.

Step 8

Once the rice is cooked, remove the chicken breasts from the skillet. Shred the chicken with two forks or chop it into bite-sized pieces, then return it to the skillet.

Step 9

Stir in the heavy cream and let the mixture simmer for another 5-7 minutes to thicken slightly.

Step 10

Taste and adjust seasoning with additional salt and black pepper, if needed.

Step 11

Garnish with chopped fresh parsley and serve hot. Enjoy your hearty bowl of Chicken and Wild Rice!
