Ingredients

  • 450 grams green beans
  • 3 pieces garlic cloves
  • 1 tablespoon fresh ginger
  • 2 tablespoons vegetable oil
  • 1 teaspoon Szechwan peppercorns
  • 3 pieces dried red chilies
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil
  • 2 pieces scallions
  • 0.5 teaspoon salt

Directions

Step 1

Wash and trim the green beans by snapping off the ends. Pat them dry with a kitchen towel to ensure they're not wet before cooking.

Step 2

Finely mince the garlic and ginger. Slice the scallions into thin rounds and set aside.

Step 3

Heat a large skillet or wok over medium-high heat. Once hot, add 2 tablespoons of vegetable oil.

Step 4

Add the Szechwan peppercorns to the oil and let them sizzle for 30 seconds until aromatic. Then, toss in the dried red chilies and stir for 10 seconds to release their flavor.

Step 5

Increase the heat to high and add the green beans to the wok. Stir-fry them for about 5-7 minutes until charred in spots and tender-crisp.

Step 6

Push the green beans to one side of the wok. Add the minced garlic and ginger to the empty side and stir-fry for 30 seconds until fragrant.

In a small bowl, whisk together the soy sauce, rice vinegar, sugar, sesame oil, and salt. Pour this sauce over the green beans and toss well to coat evenly.
