Ingredients

  • 500 grams shrimp
  • 200 grams soba noodles
  • 1 medium red bell pepper
  • 1 medium cucumber
  • 1 large carrot
  • 2 stalks green onions
  • 1 cup cilantro leaves
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1.5 tablespoons Szechuan chili oil
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger
  • 2 cloves garlic
  • 1 tablespoon sesame seeds
  • 1 teaspoon salt
  • 1 liter water

Directions

Step 1

Bring 1 liter of water to a boil in a large pot. Add the soba noodles, and cook them according to package instructions (usually about 5–7 minutes). Drain and rinse the noodles under cold water to stop the cooking process. Set aside.

Step 2

Peel and devein the shrimp. Season them with a pinch of salt. Heat a non-stick skillet over medium-high heat and lightly grease it. Cook the shrimp for 2–3 minutes on each side, or until pink and fully cooked. Set aside to cool.

Step 3

Julienne the red bell pepper, cucumber, and carrot into thin strips. Chop the green onions into thin slices. Roughly chop the cilantro leaves.
