Ingredients

  • 2 lbs Pork shoulder (boneless, trimmed and cut into 2-inch chunks)
  • 2 tbsp Cornstarch
  • 2 tbsp Vegetable oil
  • 4 cloves Garlic (minced)
  • 1 tbsp Fresh ginger (grated)
  • 1 tsp Szechuan peppercorns (crushed)
  • 1 tsp Red pepper flakes
  • 0.33 cup Soy sauce (low sodium)
  • 0.25 cup Hoison sauce
  • 2 tbsp Rice vinegar
  • 2 tbsp Honey
  • 0.5 cup Chicken broth
  • 1 whole Red bell pepper (sliced into thin strips)
  • 4 stalks Green onions (sliced, green and white parts separated)
  • 1 tsp Sesame oil
  • 1 tbsp Toasted sesame seeds (for garnish)
  • 0 optional Cooked white rice or noodles (for serving)

Directions

Step 1

In a large bowl, toss the pork chunks with cornstarch until evenly coated.

Step 2

Heat vegetable oil in a large skillet over medium-high heat. Sear the pork chunks in batches until browned on all sides, about 2-3 minutes per batch. Transfer the browned pork to the crock pot.

Step 3

In the same skillet, add minced garlic and grated ginger. Sauté for 1 minute until fragrant. Add the crushed Szechuan peppercorns and red pepper flakes, stirring to combine.

Reduce heat to low, and stir in the soy sauce, hoisin sauce, rice vinegar, honey, and chicken broth. Let the mixture simmer for 1-2 minutes, then pour it over the pork in the crock pot.

Add the sliced red bell pepper and the white parts of the green onions to the crock pot. Mix gently to distribute the ingredients evenly.
