Ingredients

  • 400 grams dried wheat noodles or spaghetti
  • 300 grams ground beef
  • 2 tablespoons neutral cooking oil (e.g., vegetable oil)
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon Szechuan peppercorns, toasted and ground
  • 1 teaspoon red chili flakes
  • 2 tablespoons doubanjiang (fermented chili bean paste)
  • 3 tablespoons soy sauce
  • 2 tablespoons dark soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar
  • 100 milliliters chicken or beef stock
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 2 stalks scallions, finely chopped
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons roasted peanuts, chopped

Directions

Step 1

Bring a large pot of water to a boil. Cook the noodles according to package instructions, then drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

Heat 1 tablespoon of cooking oil in a large skillet or wok over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5–7 minutes. Remove the beef from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of oil. Stir in the minced garlic, ginger, Szechuan peppercorns, and red chili flakes. Cook for 1–2 minutes, stirring constantly, until fragrant.

Step 4

Add the doubanjiang (fermented chili bean paste) to the skillet and stir well. Cook for 1 minute to release the flavors.

Step 5

In a small bowl, mix the soy sauce, dark soy sauce, rice vinegar, brown sugar, and chicken or beef stock. In a separate small bowl, dissolve the cornstarch in 1 tablespoon of water to create a slurry.

Step 6

Pour the soy sauce mixture into the skillet, stirring to combine. Bring the sauce to a gentle simmer, then stir in the cornstarch slurry. Cook for 1–2 minutes until the sauce thickens slightly.

Step 7

Return the cooked ground beef to the skillet and mix with the sauce. Drizzle in the sesame oil and stir well.

Step 8

Add the cooked noodles to the skillet and toss until evenly coated with the beef sauce. Cook for 1–2 minutes to completely warm the noodles.

Step 9

Divide the noodles among serving bowls. Garnish each bowl with chopped scallions, cilantro, and roasted peanuts for added texture and flavor.

Step 10

Serve immediately and enjoy your Szechuan Noodles with Spicy Beef Sauce!
