Ingredients

  • 8 oz dried noodles (lo mein or thin spaghetti)
  • 2 tbsp sesame oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 4 green onions, sliced (white and green parts separated)
  • 1 tsp Szechuan peppercorns
  • 1 tsp crushed red chili flakes
  • 3 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 2 tbsp chili oil
  • 1.5 tbsp peanut butter (or tahini)
  • 2 tbsp water (to loosen sauce)
  • 1 tbsp toasted sesame seeds
  • 0.5 cup shredded carrots (optional for garnish)
  • 2 tbsp fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Bring a large pot of water to a boil and cook the noodles according to the package instructions. Drain and rinse under cold water to stop cooking. Toss with 1 tablespoon of sesame oil to prevent sticking and set aside.

Step 2

In a small bowl, whisk together the soy sauce, dark soy sauce, rice vinegar, sugar, chili oil, peanut butter, and water until smooth. Set aside.

Step 3

Heat the remaining 1 tablespoon of sesame oil in a large skillet or wok over medium heat.

Step 4

Add the minced garlic, ginger, the white parts of the green onions, Szechuan peppercorns, and crushed red chili flakes. Sauté for about 30 seconds until fragrant, but be careful not to burn the spices.

Pour the sauce mixture into the skillet and stir well to combine with the aromatics. Let it simmer for 1-2 minutes.

Add the cooked noodles to the skillet and toss until the noodles are evenly coated with the sauce.

Remove from heat and garnish with the green parts of the green onions, toasted sesame seeds, shredded carrots, and fresh cilantro, if using.
