  • 500 grams fresh green beans
  • 2 tablespoons vegetable oil
  • 3 large garlic cloves
  • 1 teaspoon ginger
  • 1 teaspoon Szechuan peppercorns
  • 4 dried red chilies
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons water
  • 1 teaspoon cornstarch
  • 1 tablespoon sesame seeds
  • 2 scallions

Directions

Step 1

Wash and trim the green beans by snipping off both ends. Pat them dry with a kitchen towel to remove excess moisture.

Step 2

Finely mince the garlic cloves and grate the ginger. Slice the scallions into thin rounds, separating the white and green parts.

Step 3

In a small bowl, mix the soy sauce, hoisin sauce, rice vinegar, sugar, and water. Stir in the cornstarch until fully dissolved and set it aside.

Heat a large skillet or wok over medium-high heat. Add the vegetable oil and swirl to coat the surface.

Add the green beans to the hot pan and stir-fry for 4-5 minutes, or until they begin to char and develop a blistered texture. Remove and set aside.
