Ingredients

  • 500 grams green beans
  • 3 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 teaspoon Szechuan peppercorns
  • 6 pieces dried red chilies
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 2 stalks scallions, thinly sliced

Directions

Step 1

Wash and trim the ends of the green beans. Pat them dry to ensure they fry properly.

Step 2

In a small bowl, mix soy sauce, dark soy sauce, rice vinegar, sugar, cornstarch, and water. Stir until the sugar and cornstarch dissolve. Set the sauce aside.

Step 3

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. When the oil is hot, add the green beans and stir-fry for 5-7 minutes, or until they are blistered and slightly tender. Remove the green beans from the skillet and set aside.

Step 4
