Ingredients

  • 5 medium carrots
  • 1 medium yellow onion
  • 3 cloves garlic cloves

  • 4 cups vegetable broth
  • 1 teaspoon Szechuan peppercorns
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon red chili flakes
  • 0.5 cup coconut milk
  • 2 tablespoons vegetable oil
  • 0 to taste salt
  • 2 tablespoons fresh cilantro

Directions

Step 1

Peel and roughly chop the carrots and onion. Mince the garlic and ginger.

Step 2

Heat the vegetable oil in a large pot over medium heat. Add the Szechuan peppercorns and toast for 1 minute until fragrant.

Add the chopped onion to the pot and sauté for 3-5 minutes until softened.
