  • 10 pieces Dried red chilies (whole)
  • 1 teaspoon Szechuan peppercorns
  • 4 cloves Garlic (minced)
  • 1 tablespoon Ginger (minced)
  • 3 stalks Green onions (sliced into 2-inch pieces)
  • 2 tablespoons Doubanjiang (Szechuan chili bean paste)
  • 1 teaspoon Sugar
  • 0.25 cup Beef or chicken stock
  • 1 teaspoon Sesame oil

Directions

Step 1

In a mixing bowl, combine the sliced beef or deer meat with 2 tablespoons of soy sauce, 1 tablespoon of cornstarch, and Shaoxing wine. Mix well to coat the meat evenly and let it marinate for 15 minutes.

Step 2

Heat a wok or large skillet over high heat. Add 2 tablespoons of vegetable oil and swirl to coat the pan.
