Ingredients

  • 200 g all-purpose flour
  • 1 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp baking soda
  • 100 g unsalted butter
  • 100 g dark brown sugar
  • 150 ml golden syrup
  • 150 ml milk
  • 2 large eggs
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp golden syrup (for drizzling)

Directions

Step 1

Preheat your oven to 170°C (340°F). Grease and line a 20cm (8-inch) square baking pan with parchment paper.

In a large bowl, sift together the all-purpose flour, baking powder, ground ginger, ground cinnamon, and baking soda. Set aside.

In a saucepan over medium heat, melt the unsalted butter, dark brown sugar, and golden syrup until smooth and combined. Remove from heat and allow to cool slightly.
