Ingredients

  • 250 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 125 grams unsalted butter
  • 200 ml golden syrup
  • 100 grams light brown sugar
  • 150 ml whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 50 ml water

Directions

Step 1

Preheat your oven to 160°C (320°F). Grease and line a 20cm (8-inch) square cake tin with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, baking powder, baking soda, and ground ginger. Set aside.

Step 3

In a medium saucepan, melt the butter, golden syrup, and light brown sugar over low heat, stirring continuously until smooth and combined. Remove the saucepan from the heat and let the mixture cool slightly.
