Ingredients

  • 1 teaspoon Ground coriander
  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground turmeric
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Tomato paste
  • 1 cup Chicken broth
  • 0.5 cup Dried apricots (chopped)
  • 2 tablespoons Lemon juice (fresh)
  • 2 tablespoons Fresh parsley (chopped, for garnish)
  • 4 cups Cooked rice or couscous (for serving, optional)

Directions

Step 1

Heat the olive oil in a skillet over medium heat. Sear the chicken thighs for 2-3 minutes on each side until lightly browned. Transfer to a crockpot.

Step 2

In the same skillet, sauté the chopped onion until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.

Stir in the cumin, coriander, cinnamon, turmeric, paprika, salt, and black pepper. Cook the spices for 30 seconds to release the aromas.
