  • 0.5 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Rinse the lentils under cold water to remove any debris. Place them in a medium-sized saucepan with 4 cups of water and 1 teaspoon of salt. Bring the water to a boil, then reduce the heat to medium-low and simmer for 20-25 minutes until tender but not mushy. Drain and set aside.

Step 2

While the lentils cook, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the fideo noodles (or broken spaghetti pieces) and toast them, stirring frequently, until they turn golden brown. Be careful not to burn them. Remove the toasted noodles from the skillet and set aside.
