Ingredients

  • 425 grams cannellini beans (cooked or canned)
  • 150 grams good-quality canned tuna in olive oil
  • 0.5 medium red onion
  • 200 grams cherry tomatoes
  • 1 celery stalk
  • 15 grams fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

If using canned beans, drain them and rinse under cold water. Set aside to drain thoroughly.

Step 2

Drain the canned tuna, leaving just a small amount of its olive oil to retain flavor, and flake it into bite-sized pieces using a fork.

Step 3

Peel and thinly slice the red onion. If the onion is too pungent, soak the slices in cold water for 10 minutes and drain well before using.

Step 4

Halve the cherry tomatoes and thinly slice the celery stalk.

Step 5

Finely chop the fresh parsley leaves, discarding the stems.

Step 6

In a large mixing bowl, combine the drained cannellini beans, tuna, red onion, cherry tomatoes, celery, and parsley.

Step 7

In a small bowl, whisk together the extra-virgin olive oil, lemon juice, salt, and black pepper to create the dressing.

Step 8

Pour the dressing over the salad and toss gently to combine, being careful not to break the beans.

Step 9

Taste and adjust the seasoning with additional salt, pepper, or lemon juice if needed.

Step 10

Serve immediately as is or refrigerate for 30 minutes to allow the flavors to meld before serving.
