Ingredients

  • 240 ml Whole milk
  • 50 grams Granulated sugar
  • 2.25 teaspoons Active dry yeast
  • 60 grams Unsalted butter
  • 2 pieces Large eggs
  • 500 grams All-purpose flour
  • 1 teaspoon Salt

Directions

Step 1

In a small saucepan, gently warm the milk to about 38°C (100°F). It should be lukewarm but not hot to avoid killing the yeast.

Step 2

Stir in the granulated sugar until dissolved and sprinkle the active dry yeast over the top. Let the yeast bloom for 5-7 minutes, or until it appears foamy.

Step 3

Meanwhile, melt the unsalted butter in a microwave-safe bowl or saucepan and let it cool slightly.

Step 4

In a large mixing bowl, beat the eggs and combine them with the melted butter. Stir in the yeast mixture.

Step 5

Gradually add the all-purpose flour and salt, mixing with a wooden spoon or the dough hook attachment of a stand mixer until a soft dough forms.

Step 6

Turn the dough out onto a floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. Alternatively, knead with a stand mixer on a low speed for 5-6 minutes.

Step 7

Place the dough in a large, lightly oiled bowl, turning it to coat the surface. Cover with a clean kitchen towel or plastic wrap, and allow it to rise in a warm, draft-free area for 1 to 1.5 hours, or until doubled in size.

Step 8

Once risen, punch the dough down and turn it out onto a floured surface. Divide the dough into 12 equal portions and shape each into a smooth ball.

Step 9

Place the dough balls onto a parchment-lined baking sheet, spacing them about 2 inches apart. Cover with a clean kitchen towel and let them rise again for 30-45 minutes.

Step 10

Preheat the oven to 190°C (375°F). Use your fingers or the back of a spoon to create an indentation in the center of each dough ball for your desired filling (e.g., fruit jams, cheese, or sausage).

Step 11

Fill the centers, then bake in the preheated oven for 15-20 minutes, or until the kolaches are golden brown.

Step 12

Cool on a wire rack before serving. These are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
