Ingredients

  • 1 pound Swordfish steak (skinless, boneless)
  • 1 Pineapple (fresh, peeled and cored)
  • 3 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 1.5 tablespoons Honey
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 2 cloves Garlic (minced)
  • 0.25 teaspoon Ground black pepper
  • 0.25 teaspoon Salt
  • 8 Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning while grilling.

Step 2

Cut the swordfish steak into 1-inch cubes and place in a large bowl.

Step 3

Cut the pineapple into 1-inch cubes, roughly the same size as the swordfish pieces, and set aside.

Step 4

In a small bowl, whisk together the olive oil, soy sauce, honey, lemon juice, garlic, black pepper, and salt to make the marinade.

Pour half of the marinade over the swordfish cubes and toss gently to coat. Pour the other half of the marinade over the pineapple cubes and toss to coat. Let both marinate for 15 minutes.
