  • 2 pounds beef round steak

  • 2 celery stalks
  • 3 garlic cloves
  • 1 28-ounce can diced tomatoes
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 bay leaf
  • 4 medium potatoes
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley

Directions

Step 1

Tenderize the beef round steak using a meat mallet if not already tenderized. Cut the steak into 2-inch pieces.

Step 2

In a shallow dish, mix the flour, salt, pepper, and paprika. Dredge each piece of beef in the flour mixture, shaking off any excess.

Step 3

Heat a large Dutch oven or heavy pot over medium-high heat. Add olive oil and sear the beef pieces in batches until browned on all sides. Remove the browned beef and set aside.

Peel and dice the onion, carrots, and celery. Mince the garlic.
