Ingredients

  • 1.5 pounds beef round steak or top blade steak
  • 0.5 cups all-purpose flour
  • 1 teaspoons salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, thinly sliced
  • 1 medium green bell pepper, sliced into strips
  • 14.5 ounces diced tomatoes
  • 1 cup salsa (mild, medium, or hot based on preference)
  • 1 cup beef broth
  • 3 cloves garlic, minced
  • 0.5 teaspoons ground cumin
  • 0.25 cups chopped fresh cilantro
  • 3 cups hot cooked rice (optional, for serving)

Directions

Step 1

Trim any excess fat from the beef steak, then cut it into 4 equal pieces.

Step 2

In a shallow dish, combine the flour, salt, and black pepper.

Step 3

Dredge each piece of steak in the flour mixture, coating both sides well. Shake off any excess flour and set aside.

Step 4

Heat the vegetable oil in a large, deep skillet or Dutch oven over medium-high heat.

Step 5

Sear the floured steak pieces on both sides until browned, about 2-3 minutes per side. Work in batches if necessary to avoid overcrowding the pan. Remove the steak from the skillet and set aside.

Step 6

In the same skillet, reduce the heat to medium and add the sliced onion and bell pepper. Cook for 3-4 minutes until softened, stirring occasionally.

Step 7

Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 8

Add the diced tomatoes (with their juice), salsa, beef broth, and ground cumin to the skillet. Stir to combine.

Step 9

Return the browned steak to the skillet, nestling it into the tomato-salsa mixture.

Step 10

Reduce the heat to low, cover the skillet, and let the steak simmer gently for 75-90 minutes, or until the steak is tender and easily cut with a fork.

Step 11

Taste the sauce and adjust seasoning with additional salt and pepper if needed.

Step 12

Stir in the chopped cilantro just before serving for a fresh, bright flavor.

Step 13

Serve the Swiss Steak Salsa over a bed of hot cooked rice if desired, and enjoy!
