Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 500 grams Cremini mushrooms (sliced)
  • 2 cloves Garlic (minced)
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 200 grams Swiss cheese (shredded)
  • 0.5 cup Heavy cream
  • 2 Eggs (beaten)
  • 1 Prepared pie crust (store-bought or homemade)
  • 2 tablespoons Parmesan cheese (grated)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Prepare the pie crust by placing it into a 9-inch pie dish, pressing it gently into place. Trim any excess dough and set aside.

Step 3

In a large skillet, melt the butter with the olive oil over medium heat.

Step 4

Add the sliced mushrooms and cook, stirring occasionally, until they release their liquid and the liquid evaporates, about 7-10 minutes.

Step 5

Stir in the minced garlic, fresh thyme, salt, and black pepper. Cook for an additional 1-2 minutes, then remove the skillet from heat and let the mushroom mixture cool slightly.

Step 6

In a large mixing bowl, combine the shredded Swiss cheese, heavy cream, and beaten eggs. Mix until well incorporated.

Step 7

Fold the cooled mushroom mixture into the cheese and cream mixture.

Step 8

Pour the filling into the prepared pie crust, spreading it out evenly.

Step 9

Sprinkle the grated Parmesan cheese over the top of the filling.

Step 10

Place the pie on the middle rack of the preheated oven and bake for 30-40 minutes, or until the filling is set and the top is golden brown.

Step 11

Remove the pie from the oven and let it cool for 5-10 minutes before slicing and serving.
