Ingredients

  • 350 g Elbow macaroni (or small pasta of choice)
  • 4 tbsp Butter
  • 3 tbsp All-purpose flour
  • 600 ml Whole milk
  • 200 ml Heavy cream
  • 150 g Gruyère cheese, grated
  • 150 g Emmental cheese, grated
  • 0.5 tsp Nutmeg, freshly grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper, freshly ground
  • 1 cup Bread crumbs
  • 2 tbsp Olive oil or melted butter (for bread crumbs)

Directions

Step 1

Preheat your oven to 200°C (400°F). Grease a baking dish lightly with butter or non-stick spray.

Bring a large pot of salted water to a boil and cook the elbow macaroni until tender but slightly firm to the bite (al dente), as per package instructions. Drain and set aside.

In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to form a roux.
