Ingredients

  • 8 ounces Gruyère cheese
  • 8 ounces Emmental cheese
  • 1 cup Dry white wine
  • 1 whole Garlic cloves
  • 1 tablespoon Cornstarch
  • 1 tablespoon Lemon juice
  • 1 tablespoon Kirsch (cherry brandy, optional)
  • 0.25 teaspoon Ground white pepper
  • 0.125 teaspoon Freshly grated nutmeg
  • 1 loaf Crusty bread (for dipping)
  • 2 cups Assorted vegetables (optional, for dipping)

Directions

Step 1

Grate the Gruyère and Emmental cheeses and set them aside.

Step 2

Rub the inside of a fondue pot or heavy-bottomed saucepan with the garlic clove, then discard the garlic.

Step 3

In a small bowl, mix the cornstarch with 2 tablespoons of the wine until smooth and set aside.

Step 4

Heat the remaining wine in the pot over medium heat until it begins to simmer but does not boil.

Step 5

Slowly add the grated cheeses to the pot in small handfuls, stirring constantly with a wooden spoon to ensure the cheese melts evenly and does not clump.

Once all the cheese has melted and the mixture is smooth, stir in the lemon juice and the cornstarch mixture. Continue stirring until the mixture thickens, about 1-2 minutes.

If using, add the kirsch and stir to combine. Season the fondue with white pepper and nutmeg to taste.
