Ingredients

  • 1 bunch Swiss chard
  • 1.5 cups Cooked lentils
  • 0.5 cup Feta cheese
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 tablespoon Lemon juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Thoroughly rinse the Swiss chard under cold water to remove any dirt or grit. Pat dry and separate the leaves from the stems. Chop the stems into small pieces and roughly chop the leaves. Set aside.

Step 2

In a large skillet, heat the olive oil over medium heat.

Step 3

Peel and mince the garlic. Dice the onion. Add both to the skillet and sauté for about 3-4 minutes, or until the onion is softened and translucent.

Add the chopped Swiss chard stems to the skillet and cook for 5 minutes, stirring occasionally, until they are tender.
