Ingredients

  • 1 bunch Swiss chard
  • 2 tablespoons Olive oil
  • 1 medium Shallot
  • 2 cloves Garlic
  • 2 tablespoons Currants
  • 2 tablespoons Water
  • 0.25 teaspoons Red pepper flakes
  • 0.25 cups Feta cheese, crumbled
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Wash the Swiss chard thoroughly to remove any dirt or sand. Separate the stems from the leaves and chop the stems into 1/2-inch pieces. Roughly chop the leaves into bite-sized pieces and set aside.

Step 2

Peel and finely chop the shallot. Mince the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the chopped shallot and sauté for 2-3 minutes, until softened and translucent.

Step 4

Add the minced garlic and sauté for another 30 seconds, stirring constantly, to release its fragrance.

Step 5

Stir in the chopped Swiss chard stems and cook for 3-4 minutes, until they start to soften.

Step 6

Add the currants and 2 tablespoons of water. Stir and cover the skillet with a lid. Allow the currants to plump and the stems to steam for 2 minutes.

Uncover the skillet and stir in the chopped Swiss chard leaves. Sprinkle with salt, black pepper, and red pepper flakes. Cook for 3-4 minutes, stirring frequently, until the leaves wilt and everything is evenly mixed.

Remove the skillet from heat and transfer the Swiss chard mixture to a serving dish.
