Ingredients

  • 1 cup Couscous
  • 1.25 cups Vegetable broth
  • 2 tablespoons Olive oil
  • 3 Garlic cloves
  • 1 Red onion
  • 1 bunch Swiss chard
  • 1.5 cups Chickpeas (canned, drained and rinsed)
  • 1 teaspoon Cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

In a medium pot, bring the vegetable broth to a boil. Once boiling, remove from heat, add the couscous, and cover with a lid. Let it sit for 5 minutes, then fluff with a fork and set aside.

Step 2

While the couscous cooks, prepare the vegetables: mince the garlic, dice the red onion, and chop the Swiss chard (separating the stems from the leaves).

Step 3

Heat the olive oil in a large skillet over medium heat. Add the garlic and red onion, and sauté for 2-3 minutes until fragrant and softened.

Step 4

Add the chopped Swiss chard stems to the skillet and cook for 2 minutes, stirring occasionally.

Step 5

Stir in the Swiss chard leaves, chickpeas, cumin, paprika, salt, and black pepper. Cook for 5-6 minutes, stirring frequently, until the chard is wilted and tender.

Step 6

Remove the skillet from the heat and stir in the lemon juice.

Step 7

Serve the Swiss chard and chickpea mixture over the cooked couscous. Garnish with fresh parsley if desired.

Step 8

Enjoy your delicious and wholesome dish!
