Ingredients

  • 1 bunch Swiss chard
  • 3 medium Beets
  • 2 tablespoons Olive oil
  • 3 cloves Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Goat cheese
  • 0.25 cup Raisins
  • 1 tablespoon Balsamic vinegar
  • 2 tablespoons Water

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the beets thoroughly, trim the stems, and wrap each beet individually in aluminum foil.

Step 3

Place the wrapped beets on a baking sheet and roast in the oven for 35-40 minutes, or until tender when pierced with a fork.

While the beets are roasting, prepare the Swiss chard by washing the leaves and stems. Separate the stems from the leaves and chop both into bite-sized pieces, keeping them separate.

Peel and mince the garlic cloves.

In a large skillet, heat the olive oil over medium heat.
