Ingredients

  • 2 cups Swiss chard leaves
  • 1.5 cups Plain Greek yogurt
  • 2 cloves Garlic cloves
  • 1 medium Cucumber
  • 2 tablespoons Fresh dill
  • 2 tablespoons Extra-virgin olive oil
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Wash the Swiss chard leaves thoroughly and remove the stems. Chop the leaves into small pieces.

Step 2

Bring a small pot of water to a boil. Add the chopped Swiss chard leaves and blanch them for 2-3 minutes until tender. Drain and rinse under cold water to stop the cooking process. Squeeze out as much moisture as possible and set aside.

Step 3

Peel the cucumber and grate it using the large holes of a box grater. Place the grated cucumber in a clean kitchen towel and squeeze tightly to remove excess water.

Mince the garlic cloves finely or grate them with a microplane.

In a mixing bowl, combine the Greek yogurt, blanched Swiss chard, grated cucumber, minced garlic, chopped fresh dill, olive oil, lemon juice, salt, and black pepper.
