Ingredients

  • 2 cups (chopped) Swiss chard
  • 4 large Eggs
  • 2 tablespoons Milk
  • 1 tablespoon Olive oil
  • 2 cloves (minced) Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)
  • 2 tablespoons (grated) Parmesan cheese (optional)

Directions

Step 1

Wash the Swiss chard thoroughly and pat dry. Remove the tough stems and chop the leaves into bite-sized pieces.

Step 2

Crack the eggs into a bowl and whisk them together with the milk, salt, and black pepper until well combined.

Step 3

Heat the olive oil in a large non-stick skillet over medium heat.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute, or until fragrant.

Step 5

Add the chopped Swiss chard to the skillet and cook for 3-4 minutes, stirring occasionally, until the leaves are wilted and tender.

Step 6

Push the cooked Swiss chard to one side of the skillet. Lower the heat to medium-low and pour the egg mixture into the other side of the pan.

Step 7

Allow the eggs to set slightly, then gently scramble them with a spatula, mixing them with the Swiss chard as they cook.

Step 8

Continue to cook for 2-3 minutes, stirring gently, until the eggs are cooked to your desired consistency.

Step 9

Optional: Sprinkle with red pepper flakes and grated Parmesan cheese for an extra kick of flavor.

Step 10

Remove from the heat and divide the scramble between two plates. Serve immediately and enjoy!
