Ingredients

  • 14 oz firm tofu
  • 3 tbsp soy sauce or tamari
  • 1 tbsp maple syrup
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 0.5 tsp ground ginger
  • 1 bunch Swiss chard, stems removed and leaves chopped
  • 2 tbsp olive oil
  • 0.25 tsp red chili flakes (optional)
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Drain the tofu and press it for 10-15 minutes using either a tofu press or by placing it on a plate with a heavy object on top. Once pressed, cut the tofu into 1-inch cubes.

Step 3

In a medium bowl, whisk together the soy sauce (or tamari), maple syrup, sesame oil, minced garlic, and ground ginger. Add the tofu cubes to the bowl and gently toss to coat. Allow it to marinate for about 10 minutes.

Step 4

Spread the marinated tofu evenly on the prepared baking sheet. Reserve any excess marinade for later use. Bake the tofu in the preheated oven for 25 minutes, flipping halfway through for even browning.

Step 5

While the tofu bakes, heat the olive oil in a large skillet over medium heat. Add the Swiss chard and sauté for 3-5 minutes until wilted.

Step 6

If desired, sprinkle the red chili flakes over the Swiss chard for a bit of heat. Season with salt and pepper to taste.

Once the tofu is done baking, add it to the skillet with the sautéed Swiss chard. If you reserved any marinade, drizzle it over the tofu and chard for extra flavor. Cook for another 2-3 minutes to combine the flavors.
