Ingredients

  • 2 cups (chopped) Swiss chard
  • 1 cup Salmon fillet (cooked, flaked)
  • 8 large Eggs
  • 0.25 cup Milk (whole or preferred alternative)
  • 0.5 cup Parmesan cheese (grated)
  • 1 tablespoon Olive oil
  • 2 cloves Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chives (chopped, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Rinse the Swiss chard thoroughly and pat it dry. Remove the tough stems, then chop the leaves into bite-sized pieces.

Step 3

Heat a large ovenproof skillet over medium heat and add 1 tablespoon of olive oil.

Step 4

Once the oil is hot, add the minced garlic and sauté for 1 minute until fragrant.

Step 5

Add the chopped Swiss chard to the skillet and cook for 3–4 minutes, stirring occasionally, until wilted. Remove the skillet from the heat.

Step 6

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Step 7

Gently fold the flaked salmon and grated Parmesan cheese into the egg mixture.

Step 8

Pour the egg mixture over the sautéed Swiss chard in the skillet, spreading it evenly.

Step 9

Transfer the skillet to the preheated oven and bake for 15–18 minutes, or until the frittata is puffed and the center is set.

Step 10

Remove the skillet from the oven and let it cool for 5 minutes. Garnish with chopped chives before slicing and serving.
