Ingredients

  • 3 minced garlic cloves
  • 1 medium, diced carrot
  • 1 diced celery stalk
  • 1 bunch, stems removed and leaves chopped Swiss chard
  • 14 ounces canned diced tomatoes
  • 6 cups vegetable broth
  • 1 cup dried penne pasta
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 whole bay leaf
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup (optional garnish) grated Parmesan cheese

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, minced garlic, carrot, and celery. Sauté for 5–7 minutes or until the vegetables are softened.

Stir in the chopped Swiss chard leaves and cook for 2–3 minutes until wilted.
