Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 14-ounce can diced tomatoes (canned)
  • 6 cups vegetable broth
  • 2 15-ounce cans cannellini beans (or great northern beans), drained and rinsed
  • 1 large bunch Swiss chard, chopped (stems and leaves separated)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon lemon juice (optional, for garnish)
  • 0.25 teaspoon red pepper flakes (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables begin to soften.

Step 3

Stir in the minced garlic and cook for 1 minute, until fragrant.

Step 4

Add the canned diced tomatoes, vegetable broth, and beans to the pot. Stir to combine.

Step 5

Bring the soup to a boil, then reduce the heat to a simmer.

Step 6

Add the Swiss chard stems (reserve the leaves for later), dried thyme, dried oregano, salt, and black pepper. Stir well.

Step 7

Simmer the soup for 15 minutes, allowing the flavors to combine and the chard stems to soften.

Step 8

Add the Swiss chard leaves to the pot and let them wilt, about 5 minutes.

Step 9

Taste and adjust seasoning, adding more salt or pepper as needed.

Step 10

Serve hot. Optionally, garnish with a squeeze of lemon juice and a sprinkle of red pepper flakes for added brightness and heat.
