Ingredients

  • 5 cups carrots
  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1.5 cups milk
  • 2 cups Swiss cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick spray.

Step 2

Bring a large pot of water to a boil. Peel and slice the carrots into thick rounds or sticks. Add the carrots to the boiling water and cook for 8-10 minutes, until they are just tender but not mushy. Drain the carrots and set them aside.

Step 3

In a medium saucepan, melt 3 tablespoons of butter over medium heat. Once melted, whisk in the flour until a smooth paste forms. Cook for 1 minute, stirring constantly to prevent browning.

Step 4

Gradually whisk the milk into the flour mixture, adding a little at a time to avoid lumps. Continue to whisk and cook until the mixture thickens and starts to bubble slightly, about 3-4 minutes.

Step 5

Reduce the heat to low and stir in 1 1/2 cups of shredded Swiss cheese until melted and smooth. Reserve the remaining 1/2 cup of Swiss cheese for later. Stir in the salt, black pepper, and garlic powder.

Step 6

Combine the cooked carrots with the cheese sauce and mix until the carrots are evenly coated. Pour the mixture into the prepared baking dish, spreading it out evenly.

Step 7

In a small bowl, mix the breadcrumbs with olive oil until evenly coated. Sprinkle the breadcrumb mixture over the carrots, followed by the remaining 1/2 cup of Swiss cheese for an extra cheesy topping.

Step 8

Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.

Step 9

Let the casserole rest for 5 minutes before serving. Enjoy your Swiss Carrot Casserole!
