Preheat your oven to 375°F (190°C). Prepare a baking dish large enough to hold both trout and lightly grease the bottom with olive oil.
Rinse the trout under cold water and pat them dry with paper towels. Season the inside of each fish cavity with a pinch of salt and black pepper.
Thinly slice half of the lemon into rounds. Juice the remaining half and set the juice aside.
Stuff each trout with a combination of parsley, thyme, lemon slices, and 1 tablespoon of butter. Place the stuffed trout into the prepared baking dish.
In a small saucepan, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Remove from heat and stir in the reserved lemon juice and white wine (if using).
Drizzle the garlic butter mixture over the trout. Sprinkle the remaining salt and black pepper over the top of the fish.
Tightly cover the baking dish with aluminum foil to retain moisture while baking. Place the dish in the preheated oven and bake for 20 minutes.
After 20 minutes, remove the foil and switch your oven to broil. Broil the trout for an additional 3 to 5 minutes, or until the skin becomes lightly golden and slightly crisp.
