Ingredients

  • 4 pieces (6 oz each) Swordfish steaks
  • 2 tablespoons Olive oil
  • 3 tablespoons Lemon juice
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Fresh rosemary, finely chopped
  • 2 tablespoons Butter, unsalted
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons White wine (optional)
  • 4 pieces Lemon wedges (for serving)

Directions

Step 1

Pat the swordfish steaks dry with paper towels and set aside.

Step 2

In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, chopped parsley, and rosemary to create the marinade.

Step 3

Place the swordfish steaks in a shallow dish and pour the marinade over. Cover and let the fish marinate for 10 minutes at room temperature, flipping halfway if necessary.

Step 4

While the swordfish marinates, heat a large skillet over medium-high heat.

Step 5

Add 2 tablespoons of butter to the hot skillet. Once the butter melts and begins to foam, carefully place the swordfish steaks in the skillet.

Step 6

Season the top side of the steaks with salt, black pepper, and paprika. Sear for 2-3 minutes on the first side until golden brown.

Step 7

Flip the swordfish steaks and sear for another 2-3 minutes on the other side. The fish should cook through but remain moist; the internal temperature should reach 145°F (63°C).

Step 8

Optional: Add 2 tablespoons of white wine and the remaining tablespoon of lemon juice to the pan in the final minute of cooking to deglaze and enhance the flavor.

Step 9

Remove the swordfish from the skillet and let it rest for a minute.

Step 10

Serve each swordfish steak with a drizzle of the pan juices, a sprinkle of fresh parsley, and a lemon wedge on the side.
