  • 1 piece shallot (finely chopped)
  • 1 cup dry red wine
  • 1 cup beef stock
  • 2 tablespoons heavy cream

Directions

Step 1

Remove filets from the refrigerator 30 minutes before cooking and allow them to come to room temperature. Pat them dry with a paper towel.

Step 2

Using a sharp knife, carefully slice each filet horizontally, leaving one side intact, and open it like a book to create a heart shape. Press gently to flatten slightly, if needed.

Season both sides of the steaks generously with kosher salt and black pepper.
