Ingredients

  • 5 cups Fresh kale leaves
  • 2 tablespoons Lemon juice
  • 1 tablespoon Olive oil
  • 1 clove Garlic clove
  • 1 teaspoon Dijon mustard
  • 1 cup Mayonnaise
  • 0.5 cup Parmesan cheese, grated
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 cup Croutons
  • 2 filets Anchovy filets (optional)

Directions

Step 1

Wash the kale thoroughly under cold water and pat dry with a kitchen towel. Remove the tough stems and tear the leaves into bite-sized pieces.

Step 2

Place the kale in a large salad bowl. Add 1 tablespoon of lemon juice and 1 tablespoon of olive oil to the kale. Massage the kale with your hands for about 2-3 minutes until the leaves become tender and slightly darker. This will make the kale more palatable.

In a small mixing bowl, finely mince the garlic clove. If using anchovy filets, finely chop them and add to the bowl.
