Ingredients

  • 240 ml Unsweetened plant-based milk (e.g., almond, soy, oat)
  • 50 g Granulated sugar
  • 7 g Active dry yeast
  • 360 g All-purpose flour
  • 1 tsp Salt
  • 60 ml Coconut oil (melted)
  • 1 tsp Vanilla extract
  • 15 ml Additional melted coconut oil (for brushing)

Directions

Step 1

In a small saucepan, warm the plant-based milk to approximately 37-40°C (98-104°F). It should be warm to the touch, but not hot. Remove from heat.

Step 2

Add the sugar to the warm milk and stir to dissolve. Sprinkle the yeast over the top and let it sit for 5-10 minutes until bubbly and frothy, indicating the yeast is active.

Step 3

In a large mixing bowl, whisk together the flour and salt. Make a well in the center and add the yeast mixture, melted coconut oil, and vanilla extract.

Step 4

Mix the ingredients until a shaggy dough forms. Then transfer the dough onto a lightly floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic. Add a small amount of flour if the dough is too sticky, but avoid adding too much.

Step 5

Lightly grease a clean bowl with some coconut oil and place the dough inside. Cover the bowl with a clean kitchen towel or plastic wrap and set it in a warm, draft-free area to rise for 1-1.5 hours, or until the dough has doubled in size.

Step 6

Once the dough has risen, punch it down to release excess air. Turn it out onto a floured surface and divide it into 12 equal portions. Roll each portion into a smooth ball and place them onto a lightly greased or parchment-lined baking tray, leaving space between each roll.

Step 7

Cover the rolls with a kitchen towel and let them rise again for 30-40 minutes, or until they have puffed up significantly.

Step 8

Preheat your oven to 180°C (350°F). Once the rolls have finished their second rise, bake them for 20-25 minutes, or until golden brown on top.

Step 9

Remove the rolls from the oven and immediately brush the tops with melted coconut oil for a soft, glossy finish.

Step 10

Let the rolls cool slightly before serving. They are best enjoyed warm but can be stored in an airtight container at room temperature for up to 2 days or frozen for longer storage.
