Ingredients

  • 2 medium-sized Zucchini
  • 1 large Red bell pepper
  • 1 large Yellow bell pepper
  • 3 medium-sized Carrots
  • 1.5 cups Cherry tomatoes
  • 0.333 cup Olive oil
  • 3 tablespoons Apple cider vinegar
  • 2 tablespoons Honey
  • 2 tablespoons (finely chopped) Fresh tarragon leaves
  • 2 cloves (minced) Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Water

Directions

Step 1

Wash and dry all the vegetables. Slice the zucchini into thin rounds, julienne the carrots, and cut the bell peppers into thin strips.

Step 2

Halve the cherry tomatoes and place all the prepped vegetables in a large mixing bowl.

Step 3

In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, chopped tarragon, minced garlic, salt, pepper, and water to create the marinade.

Step 4

Pour the marinade over the vegetables and toss thoroughly to ensure everything is evenly coated.

Step 5

Transfer the vegetables and marinade to a shallow dish or resealable plastic bag. Let the vegetables marinate in the refrigerator for at least 1 hour, preferably 2–3 hours, to absorb the flavors.

Step 6

Before serving, toss the vegetables once again to redistribute the marinade. Serve chilled or at room temperature as a refreshing side dish or appetizer.
