Ingredients

  • 4.5 cups All-purpose flour
  • 0.25 cup Granulated sugar
  • 1.5 teaspoons Salt
  • 2.25 teaspoons Active dry yeast
  • 1.25 cups Warm water (110°F / 43°C)
  • 0.5 cup Whole milk (warm, about 100°F / 38°C)
  • 3 tablespoons Unsalted butter (softened)
  • 1 large Egg
  • 1 teaspoon Vegetable oil

Directions

Step 1

In a small bowl, combine warm water, a pinch of the granulated sugar, and the active dry yeast. Stir gently and let sit for 5-10 minutes until the mixture is foamy.

Step 2

In the bowl of a stand mixer, combine all-purpose flour, granulated sugar, and salt. Mix briefly to distribute the dry ingredients evenly.

Step 3

Add the yeast mixture, warm milk, softened butter, and egg to the dry ingredients in the stand mixer. Begin mixing on low speed using a dough hook attachment.

Step 4

Gradually increase the speed to medium and knead the dough for about 8-10 minutes. The dough should be soft and slightly sticky but should pull away from the sides of the bowl.

Step 5

Turn the dough out onto a lightly floured surface and knead by hand for an additional 2-3 minutes. Form the dough into a smooth ball.

Step 6

Coat a large mixing bowl with vegetable oil and place the dough ball inside. Cover with a clean kitchen towel or plastic wrap and let rise in a warm place for about 1 hour, or until the dough has doubled in size.

Step 7

After the first rise, gently punch down the dough to release excess air. Divide the dough into 8 equal portions for individual sub rolls or 4 portions for footlong rolls.

Step 8

Shape each portion of dough into a long, slightly flattened oval shape. Place the shaped dough onto a parchment-lined baking sheet, spaced about 2 inches apart.

Step 9

Cover the shaped dough with a clean towel and let rise again for 30-45 minutes until puffy.

Step 10

Preheat your oven to 375°F (190°C). Before baking, lightly brush the tops of the dough with milk for a softer crust or water for a slightly firmer crust.

Step 11

Bake in the preheated oven for 18-20 minutes or until the tops are golden brown and the bread sounds hollow when tapped on the bottom.

Step 12

Remove from the oven and allow the bread to cool completely on a wire rack before slicing and using for your favorite sub sandwiches.
