Ingredients

  • 4 pieces bone-in pork chops
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup canned crushed tomatoes
  • 2 tablespoons honey
  • 1 tablespoon sriracha (or other hot sauce)
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 cup frozen mixed vegetables
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large skillet over medium heat, heat 2 tablespoons of olive oil.

Step 3

Season both sides of the pork chops with salt, black pepper, paprika, garlic powder, and onion powder.

Step 4

Sear the pork chops in the skillet for 2–3 minutes per side until nicely browned. Remove from skillet and set aside.

Step 5

In the same skillet, whisk together crushed tomatoes, chicken broth, honey, sriracha, and soy sauce. Simmer for 3–4 minutes to combine the flavors.

Step 6

Grease a 9x13-inch baking dish with olive oil or cooking spray.

Step 7

Spread the uncooked rice evenly across the bottom of the baking dish.

Step 8

Scatter the frozen mixed vegetables over the rice.

Step 9

Pour the tomato-chicken broth mixture evenly over the rice and vegetables.

Step 10

Place the seared pork chops on top of the rice and vegetable mixture.

Step 11

Cover the baking dish tightly with aluminum foil to prevent moisture loss.

Step 12

Bake in the oven for 40–45 minutes, or until the rice is tender and the pork chops are cooked through (internal temperature of 145°F/63°C).

Step 13

Remove the baking dish from the oven and let it rest, covered, for 5–10 minutes.

Step 14

Garnish with fresh parsley before serving, if desired.
