Ingredients

  • 2 medium cucumber
  • 4 medium tomatoes
  • 3 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 0.5 teaspoons crushed red pepper flakes
  • 1 teaspoon sesame seeds
  • 1 stalk green onion
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Wash and dry the cucumbers and tomatoes.

Step 2

Slice the cucumbers into thin rounds and place them in a bowl.

Step 3

In a small mixing bowl, whisk together rice vinegar, honey, soy sauce, sesame oil, and crushed red pepper flakes until well combined.

Step 4

Pour the dressing over the cucumbers and stir to ensure all slices are evenly coated. Let them marinate for at least 10 minutes.

Step 5

Meanwhile, slice the tomatoes into circles about 1/4 inch thick. Arrange them on a serving platter in a single layer, slightly overlapping if necessary.

Step 6

Sprinkle the sliced tomatoes lightly with salt and black pepper for seasoning.

Step 7

Finely chop the green onion and set it aside.

Step 8

After the cucumbers have marinated, use a slotted spoon to transfer them onto the tomatoes, leaving most of the excess dressing behind.

Step 9

Sprinkle sesame seeds and chopped green onion over the cucumbers and tomatoes for garnish.

Step 10

Serve immediately as a refreshing side dish or light appetizer.
