Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced
  • 1 medium green bell pepper, diced
  • 1 large carrot, julienned
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon Sriracha sauce
  • 3 cloves garlic cloves, minced
  • 1 teaspoon ginger, minced
  • 2 teaspoons cornstarch
  • 1 cup water
  • 2 tablespoons sesame oil
  • 2 stalks scallions, sliced thinly
  • 1 teaspoon sesame seeds
  • 4 cups cooked white rice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Dice the chicken thighs into bite-sized pieces. Season with salt and black pepper and set aside.

Step 2

In a small bowl, mix the honey, soy sauce, Sriracha sauce, minced garlic, and ginger. Set the sauce aside.

Dissolve the cornstarch in 1/4 cup of water to create a slurry and set aside.
