  • 15 ounces (drained and rinsed) canned black beans
  • 15 ounces (drained and rinsed) canned kidney beans
  • 14.5 ounces canned diced tomatoes
  • 2 tablespoons honey
  • 1.5 tablespoons sriracha sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons (chopped) fresh cilantro
  • 1 (cut into wedges for serving) lime

Directions

Step 1

Rinse the rice under cold water until the water runs clear.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce the heat to low, cover, and cook for about 18-20 minutes, or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered.
