  • 12 oz Spam (original or low-sodium)
  • 1 Red bell pepper
  • 1 Green bell pepper

  • 0.25 cup Ketchup
  • 3 tbsp Rice vinegar
  • 2 tbsp Soy sauce
  • 2 tbsp Brown sugar
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 4 cups Cooked white rice or noodles (optional, for serving)

Directions

Step 1

Cut the Spam into bite-sized cubes.

Step 2

Dice the red and green bell peppers into small, bite-sized pieces.

Step 3

Drain the canned pineapple chunks and set them aside.

Step 4

In a small bowl, whisk together the ketchup, rice vinegar, soy sauce, and brown sugar to create the sweet and sour sauce. Set aside.

In another small bowl, mix the cornstarch and water to create a slurry. Set aside.
