  • 1000 grams Pork ribs
  • 1 teaspoon Salt
  • 0.5 teaspoon White pepper
  • 2 tablespoons Cornstarch
  • 500 ml Vegetable oil
  • 4 cloves Garlic
  • 3 tablespoons Ketchup
  • 3 tablespoons Rice vinegar
  • 3 tablespoons Sugar
  • 2 tablespoons Soy sauce
  • 120 ml Water
  • 1 teaspoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Rinse the pork ribs under cold water and pat them dry with paper towels. Cut the ribs into 2-3 inch sections.

Step 2

Season the ribs with salt and white pepper. Sprinkle 2 tablespoons of cornstarch over the ribs and toss to coat evenly.

Step 3

Heat the vegetable oil in a deep frying pan or wok over medium-high heat. Fry the ribs in batches until golden brown and cooked through, about 6-8 minutes per batch. Remove the ribs and drain on paper towels. Discard the oil, leaving about 1 tablespoon in the pan.

Mince the garlic cloves. In the same pan, sauté the garlic over medium heat until fragrant, about 1 minute.
